{"id":161,"date":"2009-09-15T20:41:09","date_gmt":"2009-09-16T02:41:09","guid":{"rendered":"http:\/\/www.30dayvegetarian.com\/forum\/?p=161"},"modified":"2009-09-15T20:41:24","modified_gmt":"2009-09-16T02:41:24","slug":"pasta-frittata","status":"publish","type":"post","link":"https:\/\/www.30dayvegetarian.com\/forum\/?p=161","title":{"rendered":"Pasta Frittata"},"content":{"rendered":"<p style=\"text-align: justify;\">Since writing the <a href=\"http:\/\/www.amazon.com\/30-Day-Vegetarian-Nancy-Parker\/dp\/1441490582\/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1253068301&amp;sr=1-1\" target=\"_blank\">30-Day Vegetarian<\/a>, I am so pleased to see a variety of new pastas on the shelves of even the mega-marts that make eating whole grains more mainstream than ever before.\u00a0 In chat this week with a social networking friend, I learned that even <a href=\"http:\/\/www.barillaus.com\/Home\/Pages\/Barilla_Plus.aspx\" target=\"_blank\">Barilla pasta has a new variety called <strong><em>Plus<\/em><\/strong><\/a> that combines traditional Semolina flour with a blend that includes Lentils, Chickpeas, and event Spelt!\u00a0 Yay!!\u00a0 fAt 10 grams of protein per serving and 4 grams of dietary fiber this is one kicked up pasta plate.<\/p>\n<p style=\"text-align: justify;\">Find yourself with left over pasta, how about a quick and easy Pasta Frittata?<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-163\" title=\"frittata\" src=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2009\/09\/frittata1.jpg\" alt=\"frittata\" width=\"400\" height=\"300\" srcset=\"https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2009\/09\/frittata1.jpg 400w, https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2009\/09\/frittata1-300x225.jpg 300w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/><\/p>\n<ul>\n<li>1-2 TBL Olive Oil<\/li>\n<li>\u00bd cup Sliced Mushrooms<\/li>\n<li>2 cups Cooked Pasta<\/li>\n<li>1 cup Frozen Green Peas<\/li>\n<li>6 Eggs (beaten)<\/li>\n<li>\u00bd cup Shredded Cheese<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">In an oven proof cast iron skillet saut\u00e9 your shrooms in 1-2 TBL Olive Oil over medium heat for just a minute or two.\u00a0 Add your cooked left over pasta and toss lightly in pan.\u00a0 Sprinkle in your green peas and let heat for a moment as you beat your eggs, then pour eggs into the pan and top with your shredded cheese.<\/p>\n<p style=\"text-align: justify;\">Place skillet in oven at 350\u00b0 for 20 minutes.\u00a0 If you don\u2019t have an oven proof skillet, you can cook this right on the stove top by placing a cover on the pan and cooking on low heat for 15-20 minutes or until the eggs are set.<\/p>\n<p>Serves 4<\/p>\n","protected":false},"excerpt":{"rendered":"<p style=\"text-align: justify;\">Since writing the 30-Day Vegetarian, I am so pleased to see a variety of new pastas on the shelves of even the mega-marts that make eating whole grains more mainstream than ever before.
