Veggie Chickie"},"content":{"rendered":"<p>[slideshow id=4]<\/p>\n<p>I was speaking to a lovely Indian lady the other day on the phone and though she didn&#8217;t grow up with the fake meat dishes that many of us long for to appease cellular memories of our carefree carnivorous childhood, she did mention that she once had some wonderful <em>fried vegetarian chicken<\/em> and would love to make that herself at home.\u00a0 At our house, fried chickie tenders are a bit hit with my family.\u00a0 We use these as a staple for chickie cacciatore, chickie parmesan,\u00a0 chickie fried steak with gravy or just plain fried chickie with a side of fries!\u00a0 The following is a modified recipe from my <a href=\"http:\/\/www.amazon.com\/30-Day-Vegetarian-Nancy-Parker\/dp\/1441490582\/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1262645557&amp;sr=8-1\" target=\"_blank\"><em>basic simple seitan<\/em> that is included in my cookbook<\/a>.<\/p>\n<p>This recipe uses a homemade seitan \u2013 which is made from vital wheat gluten.\u00a0 Definitely NOT SOMETHING for people with Celiac Disease or Gluten Sensitivity.<\/p>\n<p>Vital wheat gluten and is a popular ingredient in many store bought vegetarian meat alternatives.\u00a0 Making seitan at home can be easy and is a frugal way to reduce your reliance on pre-packaged foods.\u00a0 I make a big batch on the weekend so that I can use it for more meals during the week.<\/p>\n<p>If you Google Seitan\u00a0Recipes you will find a large variety of cooking methods and ingredients.\u00a0\u00a0 Additions of brewer\u2019s yeast adds nutrients, tapioca pearls texture and the selection of spices can change the entire end result.\u00a0 Below is my basic seitan recipe, a good choice for first time do-it-yourselfers\u2026<strong><\/strong><\/p>\n<p><strong>Basic Simple Seitan<\/strong><strong><\/strong><\/p>\n<ul>\n<li>2 \u00bd Cups Vital Wheat Gluten<\/li>\n<li>1\u00bd\u00a0 Cups Vegetable Broth<\/li>\n<li>\u00bc Cup Dried Minced Onion<\/li>\n<li>\u00bc Teaspoon Sage<\/li>\n<li>\u00bc Teaspoon Thyme<\/li>\n<li>\u00bd Cup Olive Oil\u00a0or Melted Margarine<\/li>\n<\/ul>\n<p>Gluten seizes up quickly, so you\u2019ll need to move fast once you add the water.\u00a0 Combine the gluten, 1\u00bd cups veggie stock, minced onion, spices and olive oil in large mixing bowl.\u00a0 Use a large wooden spoon to mix thoroughly, and then use your hands to need the spongy mass.\u00a0 Transfer to an oiled cutting board and knead for 5-10 minutes.\u00a0 Shape dough into a log and slice with a serrated knife into \u00bd inch thick medallions.\u00a0 Bring a pot of water to boil on your stove and carefully drop the medallions into the pot cook over a very low flame for 1 hour.\u00a0 Seitan\u00a0will plump up considerably as it cooks.<\/p>\n<p>After Seitan\u00a0has been boiled you can bread it like cutlets and fry or bake, toss it into a stir-fry or use it in this simple flour dredged fried chickie.<\/p>\n<p>Drain your boiled seitan and prepare your ingredients for the coating:<\/p>\n<ul>\n<li>4 Eggs<\/li>\n<li>2 Tablespoons Water<\/li>\n<li>1 Cup Whole Grain Flour<\/li>\n<li>\u00bd Teaspoon Sea Salt<\/li>\n<li>\u00bd Paprika (or Chilipowder if you prefer)<\/li>\n<li>\u00bc Teaspoon Sage<\/li>\n<li>\u00bc Teaspoon Thyme<\/li>\n<li>Olive Oil for pan frying<\/li>\n<\/ul>\n<p>In a shallow bowl combine your eggs and water and beat well.<\/p>\n<p>On a plate mix your flour and seasonings with a fork until well blended.<\/p>\n<p>Get your cast iron pan hot before adding the oil.<\/p>\n<p>To prepare chickie, dip seitan into egg wash then dredge in flour making sure to coat all sides.\u00a0 Carefully place in frying pan and cook 2-3 minutes over medium heat until golden brown on all sides.<\/p>\n<p>Drain on paper towel and serve with your favorite dippin\u2019
