{"id":268,"date":"2010-07-29T14:46:54","date_gmt":"2010-07-29T20:46:54","guid":{"rendered":"http:\/\/www.30dayvegetarian.com\/forum\/?p=268"},"modified":"2010-07-29T14:47:16","modified_gmt":"2010-07-29T20:47:16","slug":"gourmet-kabobs","status":"publish","type":"post","link":"https:\/\/www.30dayvegetarian.com\/forum\/?p=268","title":{"rendered":"Gourmet Kabobs"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/07\/amazing-kabobs.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-270\" title=\"amazing kabobs\" src=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/07\/amazing-kabobs.jpg\" alt=\"\" width=\"884\" height=\"664\" srcset=\"https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/07\/amazing-kabobs.jpg 3072w, https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/07\/amazing-kabobs-300x225.jpg 300w, https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/07\/amazing-kabobs-1024x768.jpg 1024w\" sizes=\"(max-width: 884px) 100vw, 884px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">Go ahead!\u00a0 Click on this photo to see it up close &#8230; then click again to ZOOM in!\u00a0 Take a real good look.\u00a0 If you close your eyes you can even SMELL the meat cooking on the grill.\u00a0 For folks who miss the meat in their vegan lifestyle, this mixed grill with &#8220;lamb&#8221; and &#8220;chicken&#8221; will bring a tear to your eye.\u00a0 It was one of those days when everything just worked well.\u00a0 My kids were an amazing help.\u00a0 We had mouth watering hummus, babaganoush and tzatziki.\u00a0 Oh and did I mention the home made whole grain spelt pita pockets?\u00a0 Everything a vegetarian would order from a good mediteranian restaurant.\u00a0 But what about the grilled kabobs?\u00a0 If we are lucky our favorite take-out place will offer a &#8220;vegetarian&#8221; kabob with a few grilled vegetables.\u00a0 But when the veggie-entr\u00e9e comes close to the price of the lamb grill it just doesn&#8217;t seem like a good value.\u00a0 So tonight, we decided to make our own mixed meat kabobs!!<\/p>\n<p style=\"text-align: justify;\">The recipe was simple, start with the basic seidan medallians from\u00a0 <a href=\"http:\/\/www.amazon.com\/30-Day-Vegetarian-Nancy-Parker\/dp\/1441490582\/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1236896717&amp;sr=8-1\" target=\"_blank\">our cookbook, The 30-Day Vegetarian.<\/a> For tonight&#8217;s grill, I divided the raw seitan pieces into two different simmering pots.\u00a0 For the &#8220;lamb&#8221; I used a combination of decaffinated black tea, pickling spice, sea salt and a few tablespoons of ketchup plus some aromatics including onion and carrots.\u00a0 (Don&#8217;t leave the tea bags in the pot after they have steeped for about 5 minutes.)\u00a0\u00a0\u00a0 For the &#8220;chicken&#8221; we used some sweet onion, sliced carrot and a good pinch of dried saffron.\u00a0 The yellow broth was flavorful and gave the chickie the perfect color for our kabob.<\/p>\n<p style=\"text-align: justify;\">When the seitan was done we paired the meat with some fresh mushrooms, sliced onion and fresh pineapple.\u00a0 We used a simple baste of honey, tamari and butter (margarine if you are serving a vegan meal.)\u00a0\u00a0 But the real flavor came from our cast iron grill.\u00a0 Wow.\u00a0 Just a minute or two on each side was enough to leave those amazing grill marks and fill the whole house with an aroma that made our guests wonder if they were still in a vegetarian home!<\/p>\n<p style=\"text-align: justify;\">Should I tell you about the no-bake sugar free blueberry pie?\u00a0 \ud83d\ude42\u00a0 As is often the mantra at our kitchen table &#8230; <strong><em>We Eat Well!<\/em><\/strong><\/p>\n<div id=\"_mcePaste\" style=\"position: absolute; left: -10000px; top: 1042px; width: 1px; height: 1px; overflow: hidden;\"><em>Babaganoush<\/em><\/div>\n","protected":false},"excerpt":{"rendered":"<p style=\"text-align: center;\">\n<p style=\"text-align: justify;\">Go ahead!
