{"id":342,"date":"2010-09-29T09:32:58","date_gmt":"2010-09-29T15:32:58","guid":{"rendered":"http:\/\/www.30dayvegetarian.com\/forum\/?p=342"},"modified":"2010-09-29T13:06:06","modified_gmt":"2010-09-29T19:06:06","slug":"mock-tuna-salad","status":"publish","type":"post","link":"https:\/\/www.30dayvegetarian.com\/forum\/?p=342","title":{"rendered":"Mock Tuna Salad"},"content":{"rendered":"<p><a href=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/09\/mock-tuna-close.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-344\" title=\"mock tuna close\" src=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/09\/mock-tuna-close.jpg\" alt=\"\" width=\"900\" height=\"514\" srcset=\"https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/09\/mock-tuna-close.jpg 900w, https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/09\/mock-tuna-close-300x171.jpg 300w\" sizes=\"(max-width: 900px) 100vw, 900px\" \/><\/a>I love when a friend stops by near supper time.\u00a0 My casual kitchen (read that pots and pans in the sink) is always open and our dinner table can always fit one (or more!) place settings.\u00a0 Last night we were having a very casual and cold plate &#8212; tofu-tuna salad, which is perfect for our unseasonally high 100+ degree weather.\u00a0 Home made pita bread and a cold pea salad certainly wasn&#8217;t elegant but it was good food among good friends &#8212; and isn&#8217;t that what life is about?<\/p>\n<p>I use flaxseed in this recipe to put some healthy omega oils in the dish that would have been present if we ate actual tuna.\u00a0 Remember to use VEGAN MAYONNAISE or skip the mayo altogether if you want to make this a vegan dish.<\/p>\n<ul>\n<li>14 ounces firm tofu<\/li>\n<li>1 TBL Flaxseed Oil<\/li>\n<li>1 cup chopped celery<\/li>\n<li>1\/4 cup sliced green onion<\/li>\n<li>1 TBL Lemon Juice<\/li>\n<li>1\/4 tsp Salt (0ptional)<\/li>\n<li>2 TBL Mayonnaise<\/li>\n<\/ul>\n<p>For a &#8220;meatier&#8221; texture from your tofu, try freezing it and letting it defrost before crumbling it up for this recipe.\u00a0 Slice or crumble your firm tofu in a large mixing bowl.\u00a0 Add flaxseed oil, celery, onion, lemon juice and salt (if desired) and toss lightly.\u00a0 If you have time, allow this to marinate in the refridgerator for at least an hour.\u00a0 (I like to make mine in the early afternoon if I am serving it for supper.)<\/p>\n<p>Right before serving add the mayo and mix well.<\/p>\n<p><a href=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/09\/nutrition-facts-mock-tofu1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-346\" title=\"nutrition-facts-mock-tofu\" src=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/09\/nutrition-facts-mock-tofu1-253x300.jpg\" alt=\"\" width=\"253\" height=\"300\" srcset=\"https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/09\/nutrition-facts-mock-tofu1-253x300.jpg 253w, https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/09\/nutrition-facts-mock-tofu1.jpg 437w\" sizes=\"(max-width: 253px) 100vw, 253px\" \/><\/a>Here is the nutrition facts for your entertain purposes only, that I calculated from <a href=\"http:\/\/caloriecount.about.com\" target=\"_blank\">http:\/\/caloriecount.about.com<\/a> Remember if you want to reduce calories you can use non-fat mayonnaise or skip the dressing and just serve with the light flaxseed oil toss.<\/p>\n<div id=\"_mcePaste\" style=\"position: absolute; left: -10000px; top: 0px; width: 1px; height: 1px; overflow: hidden;\">http:\/\/caloriecount.about.comhttp:\/\/caloriecount.about.com<\/div>\n","protected":false},"excerpt":{"rendered":"<p>I love when a friend stops by near supper time.
