{"id":355,"date":"2010-10-24T17:27:05","date_gmt":"2010-10-24T23:27:05","guid":{"rendered":"http:\/\/www.30dayvegetarian.com\/forum\/?p=355"},"modified":"2010-10-24T18:03:08","modified_gmt":"2010-10-25T00:03:08","slug":"oats-n-apple-clusters","status":"publish","type":"post","link":"https:\/\/www.30dayvegetarian.com\/forum\/?p=355","title":{"rendered":"Oats-N-Apple Clusters"},"content":{"rendered":"<p><a href=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/10\/walnut-oat-and-apple-clusters.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-357\" title=\"walnut oat and apple clusters\" src=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/10\/walnut-oat-and-apple-clusters-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/10\/walnut-oat-and-apple-clusters-300x200.jpg 300w, https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/10\/walnut-oat-and-apple-clusters-1024x682.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>I saw a post in my Facebook newsfeed today from a dear friend from high school who pondered her sanity for cutting back on sugar during Halloween and the upcoming holidays and I offered to send her some of my minimal sweet desserts.\u00a0 And while I was hoping for pies or cakes both of which I am the master baker (!) she asked for some not-so-sweet cookie recipes.\u00a0 So I went to my test kitchen and came up with three samples this afternoon &#8230; all of which my kids are busy still taste testing.\u00a0 \ud83d\ude42<\/p>\n<p>I&#8217;ve been cooking without processed sugar for years now and most of my desserts not only taste great but are good for you!\u00a0 I will add a warning though, if you are use to overly sweet treats (think fast food fried apple pies) then it may be a shock to your system to try a minimally sweet treat.\u00a0 But after a few years of eating healthy my kids actually prefer my cakes and cookies to store bought!\u00a0 (I have great kids!!)<\/p>\n<p>This little apple and oat cluster is perfect for VEGAN guests as well as 100% Gluten Free!\u00a0 Leaving the peel on the apple provides extra fiber and the walnuts are a wonderful source of healthy omega oils.<\/p>\n<ul>\n<li>2 cups old fashion oats (not quick or instant)<\/li>\n<li>\u00bd cup walnut bits<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 cup water<\/li>\n<li>1 date<\/li>\n<li>3 apples<\/li>\n<\/ul>\n<p>Place your dry ingredients in a large mixing bowl.\u00a0 Heat one cup of water with 1 whole date for 1 minute in the microwave or stove top.\u00a0 Core and half three apples and combine with hot water and date in your food processor and pulse until apples are chunky and the date has dissolved in the mixture.<\/p>\n<p>Add your apple blend to your dry ingredients and mix well.\u00a0 Let your batter sit for 30 minutes so give the oats time to soften.\u00a0 Drop by rounded spoon onto your cookie sheet or oven stone and back for 15 minutes in a 375\u00b0 preheated oven.<a href=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/10\/nutrition-facts-for-oatmeal-cookie.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-356\" title=\"nutrition facts for oatmeal cookie\" src=\"http:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/10\/nutrition-facts-for-oatmeal-cookie-226x300.jpg\" alt=\"\" width=\"226\" height=\"300\" srcset=\"https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/10\/nutrition-facts-for-oatmeal-cookie-226x300.jpg 226w, https:\/\/www.30dayvegetarian.com\/forum\/wp-content\/uploads\/2010\/10\/nutrition-facts-for-oatmeal-cookie.jpg 316w\" sizes=\"(max-width: 226px) 100vw, 226px\" \/><\/a><\/p>\n<p>Nutrition facts provided for entertainment purposes only &#8212; I&#8217;m no rocket scientist \ud83d\ude09 and are based on values from http:\/\/caloriecount.about.com<\/p>\n<p>At only 44 calories each these tasty morsels have only 1.9 grams of sugar.\u00a0 Traditional oatmeal cookies can have 130 calories and over 7 grams of sugar each.\u00a0 Plus these cookies are low in fat and have good soluble fiber from the whole grain oats!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I saw a post in my Facebook newsfeed today from a dear friend from high school who pondered her sanity for cutting back on sugar during Halloween and the upcoming holidays and I offered to send her some of my minimal sweet desserts.
